How to eat a Rolex in Uganda?

Now, first off, in Uganda, a Rolex is not usually going to be a fancy, high-priced wristwatch. Rolex is Uganda’s favorite fast food. It is available everywhere, in restaurants and in the market at street vendors, pre-prepared and ready to eat. Rolex is basically a chapati, rolled up with seasoned scrambled eggs, or maybe cabbage and tomatoes inside – sometimes all three. It is cheap, oh-so-tasty, and you can now experience how to eat a Rolex right at home!

Eat a Rolex – a Ugandan Traditional Recipe-

Ingredients:

(Makes 1 Rolex)

  • 1 large, or 2 small chicken eggs
  • 1 large thinly-rolled Chipati (For a recipe for making chapatis, click here)
  • 1/3 cup shredded cabbage
  • 1/4 cup diced tomato
  • salt, to taste
  • palm oil
Making Rolex Directions:
  1. Break egg(s) into a shallow cup, add pinch of salt, and beat with a fork.
  2. Pour the eggs onto a large (preferably iron) saucepan into a thin 8″ circle.
  3. Use a large spoon to rotate the eggs for even cooking. Flip once. Cook until the eggs are cooked through.
  4. Lift eggs with a spoon and place the chapati underneath the eggs and warm together for 10-20 seconds, rotating if cooking surface has uneven temperature.
  5. Remove egg-covered chapati from heat.
  6. Along the center of the chapati (but to the right side) sprinkle a stripe of cabbage, and slightly overlapped tomatoes.
  7. Sprinkle another pinch of salt over toppings.
  8. Now roll the chipati up. Bring one side over far enough to tuck in the toppings, then fold the other side up and over to seal.
  9. If you are going to eat your Ugandan Rolex on the go, wrap it in some plastic wrap, open at one end, to keep it from dripping on you.
  10. You are ready to go – now you can eat a Rolex!
