The use of coffee and chocolate gives it a unique flavor unlike any other chili I have ever tried or prepared. And, for you strict vegans, Very Spicy Veggie Chili can be prepared in true vegan style, it only becomes less than vegan with the use of condiment toppings.

Smothered Spicy Tomato Sauce Pork Chops is one of my all-time favorite All-American classic entrees. Not all Americans like their food spicy hot, it is more popular in the South, generally. However, there are plenty of Americans who, like me, will consider this smothered spicy tomato sauce pork chops meal among their favorite dishes.

This Paprika Spicy Rabbit recipe is taken from our All-American Wild Game Cuisine page. For lots more great wild game dishes, click here.

Lots of Americans, including me, love rabbit. It’s low in fat, nutritious, tasty, and is a great meat ingredient in many recipes. You can often substitute chicken for the meat in recipes that call for rabbit. But if you are a wild game meat lover, you will enjoy the taste of real rabbit. This Paprika Spicy Rabbit recipe is especially flavorful. If you live in northern regions, where winters are cold, try having some in front of the fireplace. Such comfort food, as if sent from heaven!

Southern Soul Deep Fried Alligator is about as American “Soul Food” as you can get. If you’re too squeamish about the idea of eating alligator meat, you can substitute pork or chicken. But for the real ethnic experience, hey – turn the tables on those man-eating amphibians and serve some up on the table.

Classic Christmas Turkey Recipe

Christmas in America is one of the most festive days in the land, and this Classic Christmas Turkey recipe is a traditional favorite. Be sure and get a fresh turkey. Plan ahead, go to your favorite butcher or meat market, and order in advance. Frozen turkeys cannot stand up to the flavor of a freshly butchered and dressed turkey.

Stuffed Steamed Bell Peppers Supreme

Share

Stuffed Steamed Bell Peppers Supreme is one of my own recipes. There are many stuffed bell pepper recipes in American cuisine, of course. Usually the peppers are baked. I find, however, that steamed stuffed bell peppers produces a texture in the bell peppers’ meat that is more desirable – still a little firm and chewy, and sweeter than when baked.

Stuffed Steamed Bell Peppers makes for a whole, balanced meal, as you will see in the ingredients. Still, they can just as well be served as one course in a multi-course meal. They go great with chicken dishes, fried rice, salads and soups or stews as well.

I prefer using red bell peppers, as they are, to me, the most colorful and attractive in the presentation. They are also the sweetest of the sweet bell peppers.

You can use green, yellow, or orange bell peppers also. Just keep in mind that the amount of sweetness in a bell pepper graduates upward in order of its color: Green is the least sweet, and the level of sugars in the pepper’s flesh increases in order through yellow, then orange, and then red. So choose your peppers accordingly. Stuffed Steamed Bell Peppers will taste great whatever color your peppers are.

NOTE: When selecting the peppers you want to cook, inspect the bottoms. You want peppers that have level bottoms, with the nodes in proportion to each other so that the pepper will stand upright and not tilt over during the steaming. You can use peppers that are just a little uneven on the bottoms, but if so, carefully slice away the longer node bottom to make it level with the others. Do not cut through the flesh enough to create a hole into the interior cavity, though.

Southern Soul Deep Fried Chicken Feet Public Domain

Southern Soul Deep Fried Chicken Feet

Southern Soul Deep fried chicken feet is about as soulful a food as you can get. The dish was originally dreamed up by the African slaves living on large plantations in Southern USA during the 17th century. They (for the most part) lived in poor, squalid conditions, and were usually given the “leftovers” to eat, when it came to meat. Animal parts, like intestines, feet, skins, hooves, heads, etc., were what the women had to work with in their kitchens.

Due to their innate skills and creativity when it came to preparing foods, they made some amazingly tasty meals out of what the white people considered garbage. These Southern Soul deep fried chicken feet are just one example of truly exemplary originality and culinary satisfaction they achieved, in spite of their dire circumstances.

Venison Pot Roast

Alaskan Style Dutch Oven Venison Roast

Share

Venison roast, prepared Alaskan style, slow cooked in a Dutch Oven, is superb. The old traditional Alaskan cuisine relied heavily on hunting and gathering, so seafoods and wild game meats were most often on the dinner plates. Modern day Alaskan cuisine has become more diverse, but some old traditional dishes are just so simply good, they are still favored today. That is the case with this Venison roast!
