This All-American style baked Omelet Casserole is perfect for “special occasions” and for treating guests or relatives who have spent the night in your house. They will feel like they are being treated as Royalty, trust me. If you or your family or guests do not like hot and spicy dishes, simply leave out the hot sauce(s) recommended – or cut down on the amount. Me? I like this omelet with the full gusto!
Baked Omelet Casserole Recipe-
Ingredients:
- 10 eggs
- 1/3 cup whole milk
- 1/2 tsp. salt
- 4 dashes of either Frank’s Original Red Hot sauce (for hot/spicy) or Sriracha sauce (for super-hot/spicy!)
- 1/2 lb. hickory smoked bacon – cooked, and chopped into small bite-size chunks
- 1 (4 oz.) can Californian large, black, pitted, whole olives (get “Early” Californian if you can), juices drained off
- 2 medium sized ripe tomatoes, chopped
- 1/4 cup green onions, chopped
- 6 oz. cup sliced Champignon mushrooms (fresh if you can get them, but you can also rehydrate dried Champignon mushrooms for the same effect – you will only need 2 oz. of them)
- 3/4 cup Colby Jack cheese, freshly shredded
Directions:
- Preheat oven to 350 degrees. Coat an 8 inch round or square ceramic baking dish with non-stick olive oil cooking spray.
- In a large bowl, combine eggs and milk. With an electric mixer, beat until foamy.
- Blend in salt and hot pepper sauce.
- Stir in bacon, olives, tomatoes, green onions, mushrooms and cheese.
- Pour into prepared pan and cover with lid or aluminum foil.
- Bake in preheated oven for 40 to 50 minutes, or until the eggs are well set in the middle.
- Serve your Baked Omelet Casserole fresh out of the oven, while still nice and hot.

Never heard of a baked omelet before, but this sure looks like a great dish.
Hank, you can count on it!
WOW – now THAT is what I call an OMELET!! LOL
Got that right, Bob! 😉
My goodness, what a yummy and hearty looking omelet! And it’s spicy, too, so all the better – definitely wanna make this one!
Go for it, Cassandra, trust me it is super delicious, spicy, and filling!
Looks absolutely scrumptious! Hubby said he was going to cook me whatever I wanted for Mother’s Day breakfast, so this is definitely what I want! A perfect start to a fun day – our daughter has invited us over to her house for dinner too (and she is an excellent cook – taught her everything she knows, hahahaha), so this old gal can relax and enjoy some fine eating ALL day, without having to do any of the work, lol.
Margo, I wish you a wonderful Mother’s Day, enjoy! And let us know how well hubby’s Omelet Casserole Baked American Style turned out, okay?
Super Mother’s Day idea, Old Silly! My mom isn’t much into hot & spicy, but everything else is right up her alley. Gonna start her day off with a “baked bang”! LOL
You have one lucky Mum, Barb! And trust me, the omelet will taste just fine without the hot & spicy.
