New England Lobster Rolls

New England Lobster Rolls

To make perfect New England lobster rolls, you want to keep it simple. The succulent flavor of lobster meat is in itself what you want featured. Avoid the temptation to add much – if anything – to this simple, yet elegant recipe. Too many extra flavors can wind up overshadowing the unique and subtle flavor of the lobster salad filling. Even the use of sriracha hot sauce, if overdone, can ruin a good New England Lobster Roll. You may even want to not use any hot sauce at all, but I find just a bit of it actually adds a “brightening-up” taste to the lobster. Experiment for yourself.

Note: If you are going to use fresh lobster meat, and will cook it yourself, you will need to buy four times the weight (in lobster tail form) of the amount you want to wind up with for your lobster salad. In other words, for this recipe, which calls for 1 pound of lobster meat, you would need four pounds of fresh lobster tails.

The below recipe does not take into account cooking time for the lobster, so for your convenience there is a chart below the recipe which shows how long to steam the tails.

Supreme Venison Lasagna

Supreme Venison Lasagna

This Supreme Venison Lasagna is the best lasagne recipe I’ve ever prepared or tasted – bar none. Have family or friends who swear they don’t like venison or other wild game meats – they say the flavor is too strong?

Trust me, they will love this. The sauce permeates the meat and the flavors come out subtle and elegant. After your guests have filled themselves happy, then let them know they just ate some venison!

Pigeon Rice and Peas

Pigeon Rice and Peas

Pigeon Rice and Peas is a staple dish in the Bahamas, and a national, highly popular favorite meal. When serving Pigeon Rice and Peas, be sure to also serve some Johnycakes as an accompaniment. You must use “pigeon peas” for this dish to be authentic.

British Bangers and Mash

English Bangers and Mash

English Bangers and Mash is also South African favorite; they developed a taste for the dish during Great Britain’s 100+ years of Imperial rule. But this is the original, authentic and traditional British version – English Bangers and Mash. It is also very often served with green peas (as seen in the picture) so feel free to add some freshly steamed peas to the dish before serving, if you like.

Iranian Tabbouleh

Iranian Tabbouleh

While tabbouleh is not original or unique to Iran, Iranian Tabbouleh does have enough distinctiveness to mark it as exceptional. Tabbouleh, in its many subtle variations, is prevalent throughout the cuisines of Mediterranean and Middle Eastern countries. Tabbouleh is a marvelously complex combination of flavors and textures. This Iranian Tabbouleh features fresh flat leaf parsley, cracked bulgar, tomatoes, cucumbers, and citrus zest and herbs. A cold salad that makes a perfect accompaniment to the hot main courses of Iranian and other Mediterranean cuisines.

Afghani Korme Kofta

Afghani Korme Kofta

Afghani Korme Kofta (Lamb Meatballs smothered in a spicy sauce) is a classic example of Afghani cuisine. It is a main entree, of course, but Afghani Korme Kofta is typically accompanied by vegetable, rice, and fruits side dishes. Koftas can be made with seafood, poultry, or even grains, but this Korme Kofta is a national favorite and a time-honored authentic and traditional Afghani dish.
