Pikliz is Haiti’s version of pickled vegetables. But believe you me, Pikliz is much more hot and spicy than the pickles you may be familiar with! Haitian Pikliz are super tasty, and they are often served as condiments with many Haitian dishes. Some Haitian meals even call for Pikliz as one of the entree ingredients.

Salt Plank Grilled Steak – what’s that, you say?

With Memorial Day weekend coming up here in the USA, there will be a lot of grilling going on. The weather is getting warm, people will have a three day weekend to enjoy, and the backyard grilles will be fired up and cooking. So I thought it appropriate to share a grilled steak recipe and method that is very unique and especially tasty:

This technique requires a slab of mineral-rich salt, and the best salt planks are mined and fashioned from the Himalayan Mountains.

Out of these stunningly beautiful Himalayan salt caves, are produced these slabs, which just happen to be a perfect grilling implement.

Salt PlanksYou want a salt plank that is nice and thick, 1-1/4″ at least, 1-1/2″ is better, 2″ and more is best. I’ve seen some as thick as 3″. From what I’d read before getting my plank, and from my experience now, these slabs can be placed directly on the hot grille, or on a gas stove burner – even if the flames are touching the bottoms. I’ve heard that if you want to use them on an electric cooktop stove, you should have some kind of metal spacer, like a ring, creating just a bit of space between the slab and the cooktop.

Making it even better, cooking with salt slabs is healthy for you! They not only convey anti-bacterial properties, they leach over 84 essential minerals into your food. So your steak, veggies, seafood, whatever, is naturally seasoned and comes to the dinner table loaded with lots of what’s good for what ails you.

Everyone who comes to this site often, from all over the planet, has a love of ethnic foods. You are all like me, enjoying tasting the foods of many different cultures. Recently, one of the readers posed the question, “Which culture has the healthiest ethnic food of all?”

So I did some research. I wanted to know, myself. I had a hunch it would probably be one of the Asian cuisines. And, while lots of Asian cultures do have cuisines that rank very high on the list of “Healthiest Ethnic Food”, well …

I was wrong.


Thailand, Vietnam, and Japan are on most Top Ten lists I found, often all three were in the Top Five. But guess which region, out of all the cultures on Earth, actually does have the healthiest diet of all?

Geoduck Clams

In my never-ending search for unique, often “odd” ethnic foods to share here, I came across the Geoduck Clam. The Geoduck Clam (means, literally, “gooey clam”) is a saltwater clam that thrives off the West Coast of America. For a clam, it is huge in size, with the “siphon” – the part that protrudes out of the shell – reaching lengths of up to 1 meter (3.3 feet) in length!

Everything I read about this edible seafood is that it is extremely tasty with a marvelous texture, so I ordered some. Make sure, if you decide to try it out as well, to get sushi grade Geoduck Clams.

I also checked out a few recipes, and came up with my own version of a “Japanese style” sautéed Geoduck Clams recipe, which I am posting on the West Coast North American Cuisine page on this site.

If you like sashimi, the siphon of a fresh Geoduck clam can simply be sliced and eaten raw. I tried it, and found it to have an exquisite, mild flavor, and a silky texture on the palate.

Geoduck Clams are also considered to be an aphrodisiac!

Well, clams in general have long held that reputation, but these particularly big clams are regarded as quite remarkable in that capacity. I have not had the chance to test out that aspect yet, though (wink).

I was searching for some unique, even “strange” ethnic recipes to share here during the summer grilling months. A Google search for “Strange Grilled Meats” led me to a recipe that I modified just a tad, but still using the same meats:

Ostrich, Emu, and/or Kangaroo steaks.

Now I know, to Australians, these are probably not considered strange grilled meats, not even in the least. But to us living here in North America, yes … plopping steaks from those animals on the barbie certainly falls under the category of-

Steaks on the GrilleI haven’t tried the ostrich or emu yet, but I did order some kangaroo steaks. Actually, I purchased some boneless Kangaroo loin meat, and sliced several thick steaks off of it.

I marinated them according to the recipe below, grilled them up medium rare, and let me tell you … delicious!

So good in fact, I decided I’m going to try out the same marinade/recipe with ostrich and emu, too. But for right now, on this post, the following is how I prepared my Kangaroo steaks.
