Pilau Rice with Beef Stew is a Tanzanian meal that is about as hearty, filling, and tasty as you could ever want.
Pilau Rice with Beef Stew Recipe-
Ingredients:
For the Beef Stew-
- 1 lb. beef chuck roast meat, chopped into very small pieces and salted to taste
- 2 carrots, peeled and fine chopped
- 2 green bell peppers, cored, seeded, and fine chopped
- 4 ripe tomatoes, cored, seeded, and fine chopped
- 4 onions, peeled and fine chopped
- Yellow curry powder, to taste
- Black pepper, to taste
- Dried coriander leaves, to taste
- Seasoning salt, to taste
- Crisco cooking oil
- Fresh coriander (cilantro), rough chopped, for garnish
For the Pilau Rice-
- 1-1/2 cups uncooked long grain white rice
- 3 cups water
- 2 tbsp. yellow curry powder
- 8 oz. fresh or frozen green peas
- 4 tbsp. garam massala (special African seasoning, and a must have ingredient)
- 3 onions, peeled and fine chopped
- 3 ripe tomatoes, cored, seeded, and fine chopped
- Crisco oil
- Salt, to taste
Directions:
For the Beef Stew-
- Sauté the onions in Crisco until they have browned, then add in the tomatoes and green pepper, stirring everything together.
- Keep cooking and stirring as you add in the carrots, black pepper and coriander.
- When the carrots are becoming soft, add in the meat.
- As soon as the meat is well browned, add in the curry powder and salt to taste.
For the Pilau Rice-
- Sauté the onions in Crisco until softened, translucent, and fragrant, then add in the tomatoes.
- Boil the peas until tender.
- In a medium to large sized cooking pot, place the rice and water, and bring to a boil. Add in the garam massala and (optional) some salt, to taste.
- When the water starts boiling, add in the peas, reduce the heat to just a lively simmer, and cook with a lid slightly ajar until the rice is well done.
To Serve-
- Place a generous mound of the Pilau Rice on each serving plate, then ladle some of the stew over the rice.
- Garnish each serving of your Pilau Rice with Beef Stew with a liberal sprinkling of fresh cilantro.
